Pantry challenge: banana chocolate oat bars

Since we are in the midst of a pandemic, many of us are stuck inside. I hope everyone is safe and stays healthy. Even though it’s just the beginning of our quarantine in the US, I am already getting restless. I tried to think of something to do and of course thought of something that surrounds food!

I put together these delicious banana chocolate oat bars with nut butter. These were all ingredients I already had in my house and it was super easy to throw this together. I hope you enjoy!

Ingredients

• 2 eggs

• 1 ripe banana

• 2 Tbsp maple syrup

• 2 Tbsp melted butter

• 1/2 tsp ground cinnamon

• 2 cups milk or dairy free substitute – I used coconut milk

• 2 ½ cups rolled oats

• 3/4 cup chopped walnuts or pecans

• 1/2 cup chocolate chips – I used espresso chocolate chips

• 3 Tbsp nut butter (optional)

Instructions

1. Preheat oven to 350 degrees F and grease a 9×9 baking dish.

2. Add eggs, 1/2 ripe banana, maple syrup, melted butter, milk, and cinnamon in a large mixing bowl and whisk to combine.

3. Then add oats, nuts, and half of the chocolate chips and stir to combine. 

4. Transfer mixture to the prepared baking dish and top with additional banana slices, nuts, and remaining chocolate chips.

5. Bake for 30-35 minutes. Remove from oven and let cool a few minutes.

6. Pour a little more milk over the top to moisten and a drizzle of nut butter.
